Caponata Rusticana (vegan)
Caponata (in Sicilian dialect: capunata) is a side dish never miss in a proper Sicilian table, consisting of chopped fried eggplant and other vegetables, seasoned with olive oil, tomato sauce, celery, olives, and capers, in an agrodolce sauce.
The Rusticana is the Traditional one with eggplants and peppers, other version exist without peppers (Caponata Palermitana) or with potato (Caponata Messinese).
Ingredients: Aubergines, Peppers, Passata tomato, extra virgin olive oil, onion, CELERY, capers, green olives, raisins, tomato paste, wine vinegar, sugar, Italian PINE NUTS. (280gr)
Usage: Side dish, cold dish or stir-fried with toasted breadcrumbs
